Super Easy Gluten Free Chocolate Cake

Today I was making gluten free cake and couldn't for the life of me find my recipe.  Yup it was one of those days!!!!  And this is the recipe I found and out of all the gluten free cakes has raised the best, moist, looks yummy (haven't tried it yet much to Zeke's disappointment!)

Best of all mix it all in one bowl...
Trying to decide still if I want to put frosting on it or not.  I'm not a big frosting fan.

1 1/2 cups gluten free flour (My favorite mixture is 1 cup rice flour, 1/3 cup potato starch, 1/4 cup tapioca flour)
1/2 cup cocoa
1 cup sugar
1/2 tsp salt
2 tsp baking soda
3/4 tsp xanthan gum
5 tb cooking oil
1 tb vinegar
1 tsp vanilla
1 egg
1 cup water

1.  Mix all dry ingredients.
2.  Add everything else and mix well.
3.  Pour into a greased square 9 inch pan.

Bake 350 degrees for 30-35 minutes.

I did decide to frost it after all but now of course I can't find the picture I took of it frosted!!!!
